On The Rocks Tea

Summertime in Port Townsend is all about the sun, sailing, festivals, concerts on the dock, dancing under the stars, music, music, picnics on the beach, outdoor markets, and music. And it all goes better with a tall glass of Pippa’s Real Iced Tea.

America gave the world a great gift when it invented iced tea at the World’s Fair in St. Louis in 1904. (About the other invention – the tea bag – we will say no more.) Make your own at home the way Pippa makes hers: put a heaping teaspoon of loose tea per 6 oz. water in a large pitcher and fill with cold filtered water. Leave in the fridge for several hours, preferably overnight, and then strain into a clean pitcher. Your tea will not get that nasty cloudy look and will not be bitter.
